If you are like me and you like to have a great tasting vegetarian meal but you don't want to spend a lot of time in the kitchen, then this recipe is for you! This is a super quick and simple meal that you can prepare mid-week when you are rushing to get dinner on the table but still want something healthy.
1. Take 1 to 2 heads of cabbage and chop them up, then thoroughly rinse and clean.
2. Take the Beyond sausage of choice and cut it down the center, then turn it and cut it down the center again so it is in 4 pieces. Then chop each piece so that it creates dime-size pieces of sausage. I use the Italian sausage because it adds great flavor to the cabbage and I only use one sausage link since that is enough meat-like product for me. Use as much or as little as you would like.

3. Now it is time for layering! Put about 1/2 to 1 inch of water in a large pot. Sprinkle your favorite seasoning in the water, I use the one above...amazing, we will be layering in the seasoning so don't overdo it. Add a layer of cabbage, and sprinkle in some beyond sausage over the top. Then repeat until you have everything in the pot. Seasoning, cabbage, then sausage. Try to finish with the seasoning, cabbage, and sausage layer on the very top so it can seep down in the cabbage as it steams.
4. Turn the stove on medium-high and let it cook with the lid on for 15 minutes, stirring the pot of cabbage every few minutes. Turn the temperature down if it is too high.
That is literally it, once you are done, you have a great vegetarian meal option that is healthy and tastes great...and you didn't have to spend hours in the kitchen. Enjoy! FLL
