Hi everyone, I'm back with another meatless dinner option and today's meal is a classic. When I was younger, I HATED peas...and any other vegetable like most kids. The one way my mother got me to eat peas was by pairing them with meatloaf and mash potatoes. It had to be both of these and no switching up the combination would work. Now it is my go-to recipe but since I no longer eat meat, I promised myself that I would find recipes that allowed me to turn them into meatless creations. So here we go.
Potatoes:
5 large potatoes (or more for more people. I get about 5 to 6 servings from this)
butter
cashew yogurt or sour cream
Peas:
Fresh or Frozen (I use frozen)
Meatloaf:
2 lbs Beyond Burger (You can use Impossible burger if you'd like. Beyond is my personal favorite.)
1 cup of Diced Yellow Onion
1/2 cup of Diced Bell Pepper
3 tbsp of Milk
A couple of dashes of Worcestershire Sauce
1 tbsp of Steak Sauce
2 tbsp of Ketchup
1 tsp of Salt
1/2 tsp of Ground Black Pepper
1 tsp of Onion Powder
1/4 tsp of Garlic Powder
2 Eggs, lightly beaten
1/4 cup of Plain Bread Crumbs
Glaze Topping:
1/3 cup of Ketchup
1 tbsp of Steak Sauce
Instructions
Preheat oven to 375°F (190.5°C).
You can use your pan of choice. If you use a baking pan, or sheet pan, be sure to line it with aluminum foil. I used a pyrex dish like my mom used to use.)
Using a large mixing bowl; combine all of the ingredients for the meatloaf. Use hands to finish mixing so that all of the ingredients are well combined. (Get in there! lol) Transfer the meatless mixture to the pyrex dish and use your hands to form it into a loaf.
Wash your hands and let's get started on the glaze. In a small mixing bowl combine the glaze ingredients and mix well.
Spoon half of the glaze mixture onto the meatloaf and use a brush to spread it over the top. Set aside the remaining glaze for later.
Place the meatloaf into the oven and set a timer for 1 hour.
Apply the remaining glaze to the top of the meatloaf and bake an additional 15 minutes, or until done. Allow the meatloaf to rest for 10 minutes.
During this last 15 minute cooking time and 10 minute rest time, let's start our potatoes.
I usually cut my potatoes up into cubed chunks so they cook evenly and quickly.
Place cut-up potatoes in boiling water. ( add a little salt to the water if you'd like and make sure the water covers the top of the potatoes)
Cook until you are tender and a fork can slide through them. (This usually takes about 15 minutes.
Once they are done, add your butter and cashew yogurt/sour cream. Season with salt and pepper to your liking.
Now let's add the peas to boiling water and cook for 2 to 4 minutes.
At this point, your meatloaf, mash potatoes, and steamed peas should all be done.
Slice meatloaf into 1-inch slices for serving.
